OLIVE VARIETY Leccino, Correggiolo, Moraiolo, Frantoio. HARVESTING METHOD By hand. EXTRACTION METHOD Cold pressing, continuous cycle. APPEARANCE Slightly cloudy, clearing throught natural sedimentation. COLOUR Deep green. FRAGRANCE Distinct, fresh olive scent with hints of raw vegetables. FLAVOUR Intensely fruity and fragrant, slightly bitter and peppery with an aromatic persistence. CONSISTENCY Medium fluidity. IDEAL USE Use raw on any type of dish. Particularly suited for use on raw or cooked vegetables. PACKAGING In bottles of either 0,250 or 0,750 l. capacity. AVERAGE PRODUCTION 2,000 liters. STORAGE Keep away from light and direct heat. Ideal storage temperature is about 15° - 18°C. |
